The bilona is traditionally made from specific woods and operated with a rope pulled back and forth, rotating the churner in alternating directions within a clay or wooden pot. This bidirectional churning is key — it separates butter gently without generating the heat that industrial centrifuges produce.

The Complete Bilona Process

Step 1 — Milk collection: Fresh A2 milk from indigenous cows (Gir, Sahiwal) is collected. The A2 designation matters because these breeds produce milk without the BCM-7-forming A1 beta-casein.

Step 2 — Boiling and cooling: The milk is gently boiled, then cooled to lukewarm. This mild pasteurization is done at lower temperatures than industrial UHT processing, preserving heat-sensitive enzymes and nutrients.

Step 3 — Culturing (fermentation): A small amount of previous curd (starter culture) is added to the warm milk, which is left overnight to culture into dahi (curd/yogurt). This fermentation is the step that industrial ghee skips entirely — and it’s where much of the nutritional magic happens. Beneficial bacteria multiply, producing additional short-chain fatty acids and transforming the fat structure.

Step 4 — Hand-churning: The cultured curd is churned by hand with the wooden bilona, moving the rod back and forth. Cold water is often added during churning. The butter (makhan) gradually separates and floats to the top, leaving buttermilk (chaas) behind. This is done at ambient temperature — no heat, no oxidation.

Industrial ghee production uses “direct cream” method: cream is centrifugally separated from milk and directly clarified — no culturing, no churning, no fermentation.
