Jasdan Gir Cows — The Saurashtra Heritage Behind Our A2 Ghee
Quick Answer
Jasdan is a town in the Rajkot district of Saurashtra, Gujarat, the home region of the Gir cow breed. Our Gaurishala near Jasdan raises Gir cows, a hardy, humped indigenous breed known for A2 milk. Their milk is set into curd and hand-churned by the bilona method to make our A2 Gir Cow Ghee. What matters most is breed purity, care, and grazing, not marketing labels.
Where the Gir cow comes from
The Gir breed takes its name from the Gir forest and hills of Saurashtra, in western Gujarat. For centuries, pastoral communities in the region bred these cattle for hardiness in heat, resistance to local diseases, and good milk on simple grazing. Today the Gir cow is one of India’s best-known dairy breeds, and Gir genetics have been taken to countries such as Brazil, where they were crossed into large dairy herds.
Jasdan and Saurashtra's cattle traditions
Jasdan, in Rajkot district, sits in the heart of Saurashtra’s cattle country. The region has a long tradition of Gaurishalas, cow shelters that care for indigenous cows, including old and non-milking animals. Gir cows from this belt have been shown at livestock fairs and recognized in breed competitions over the years.
Our own work began here, with a Gaurishala that cares for Gir cows and uses their milk and Panchagavya products to support the shelter.
What makes Gir milk special
Gir cows naturally produce A2 beta-casein milk, a protein type some people find easier to digest than the A1 protein common in many high-yield breeds. Gir milk is also known for good fat content, which matters for ghee. Gir cows give less milk per day than high-yield crossbreeds, so their milk is more expensive to produce.
What a Gaurishala means
A Gaurishala is not a commercial dairy. Its purpose is Gau Seva, the care of cows for their whole lives, including after they stop giving milk. That means feeding and sheltering animals that produce nothing, which a profit-first dairy would not do.
This kind of care costs more than intensive dairying, and it is reflected in the price of products like our ghee. If you would like to know how our herd is fed and looked after, message us on WhatsApp and we will tell you.
From Gir milk to bilona ghee
Our A2 Gir Cow Bilona Ghee is made the traditional way: whole Gir cow milk is boiled and set into curd overnight, the curd is hand-churned into butter (makkhan), and the butter is slowly heated until it becomes golden ghee. It takes roughly 25 to 30 litres of milk to make one kilogram. If you have questions about our herd or process, message us on WhatsApp.
The bottom line
The Gir cow is one of Saurashtra’s great gifts to Indian agriculture: hardy, gentle, and known for rich A2 milk. Supporting Gaurishalas that care for these cows for their whole lives helps keep the breed and its traditions alive. When you buy Gir cow ghee, ask where the herd is and how it is looked after; a good farm will be glad to tell you.
